Herby chickpea flour pancake

Chickpea flour is full of healthy nutrients. It's a great alternative to refined wheat flour, as it's lower in carbs and calories yet richer in protein and fiber.

1 cup chickpea flour
1 cup water
1 tsp baking powder
1/2 tsp salt
1/4 tsp smoked paprika or chilli powder
11/2 cups chopped fresh herbs like: parsley, coriander, dill, spring onion or any of you choice
Coconut oil for frying


  1. In a mixing bowl, whisk together chickpea flour, water, baking powder, salt and spices to a smooth batter. 
  2. Add the chopped herbs and combine.
  3. Heat a little bit of coconut oil in a heavy skillet and spoon a large spoonful (about a 1/4 of the mixture) of the batter to create a pancake. Cover and cook 4-5 minuted until the pancake has set and the bottom is nicely brown. 
  4. Flip and cook for another 2-3 minutes. Repeat with the rest of the batter.
