Hydrating noodle soup

1 carrot
1 red pepper
400 gr green beans
1 leek
1 onion
1 tomato
1 lime
250 gr egg noodles
1 tablet herbal broth
225 gr shrimps
15 gr coriander

Preparation
- Bring 1.5 liters of water to a boil. Boil the egg noodles for 6 minutes.
- In another (smaller) pan, boil 1 liter of water, add the herbal broth tablet and dissolve it in the water.
- Clean all vegetables.
- Peel and chop the onion. Cut the bell pepper into pieces. Add these to the (smaller) pan and let simmer for 7 minutes.
- Meanwhile the soup is simmering, drain and rinse the noodles with cold water.
- Cut the carrots, green beans, tomato and cut the leek into half rings.
- Add the carrots, tomato, leek, green beans to the (smaller) pan. Let simmer for 2 more minutes.
- Add the shrimps and let simmer for 1 more minute.
- Divide the noodles among the soup bowls. Pour the soup over this. Serve with lime wedges and coriander.
