Ingredients

1 carrot
1 red pepper
400 gr green beans
1 leek
1 onion
1 tomato
1 lime
250 gr egg noodles
1 tablet herbal broth
225 gr shrimps
15 gr coriander

Preparation

  1. Bring 1.5 liters of water to a boil. Boil the egg noodles for 6 minutes.
  2. In another (smaller) pan, boil 1 liter of water, add the herbal broth tablet and dissolve it in the water.
  3. Clean all vegetables.
  4. Peel and chop the onion. Cut the bell pepper into pieces. Add these to the (smaller) pan and let simmer for 7 minutes.
  5. Meanwhile the soup is simmering, drain and rinse the noodles with cold water.
  6. Cut the carrots, green beans, tomato and cut the leek into half rings.
  7. Add the carrots, tomato, leek, green beans to the (smaller) pan. Let simmer for 2 more minutes.
  8. Add the shrimps and let simmer for 1 more minute.
  9. Divide the noodles among the soup bowls. Pour the soup over this. Serve with lime wedges and coriander.
