400 gram lentils
2 tomatoes
1 red union
1 red hot pepper
2 pickles
1 hand of fresh coriander or parsley
1 block of feta cheese
1 lime

For the dressing:
Olive oil
Cumin powder


  1. Rinse the lentils under cold running water, drain well and transfer to a bowl. Quarter the tomatoes, remove the seeds and dice the quarters. Halve the onion and finely chop the halves.
  2. Chop the gherkins into cubes and cut the feta into small pieces. Finely chop the cilantro (or parsley). Remove the seeds and seeds from the pepper and cut them into very thin rings.
  3. Mix all ingredients into the lentils and toss in the olive oil. Season with cumin powder, salt and pepper.
  4. Halve the lime and squeeze it over the salad.

Tip: Transfer half of the salad to a sealable jar and put in the refrigerator for lunch. The other half can be used as a side dish with dinner.
