Ingredients

1 can (250gr.) red kidney beans, drained and washed
1/2 can (140gr.) corn kernels, drained
1 avocado, in cubes
1 red bell pepper, in cubes
A large handful of rocket leaves
A large handful fresh coriander leaves, chopped
1 spring onion, finely sliced
Chilli pepper, finely chopped, optional
Juice from one lime
2-3 tbsp olive oil
Salt and pepper to taste

Preparation

  1. Place beans, corn, avocado, peppers and herbs in a salad bowl. 
  2. Add the lime juice, oil, salt and pepper and mix together.
