Middle Eastern rainbow salad with tahini dressing

The secret for this simple salad is to choose good quality, fresh vegetables, ripe tomatoes, crisp peppers and cucumbers. The rest is down to finely chopping and good seasoning. This salad is packed with vitamins, minerals and phytochemical. The tahini dressing is a good addition of protein, calcium and good fats.

Ingredients

3 large ripe tomatoes
1 cucumber
1 red pepper
1 small red onion
Juice and zest from a small lemon
2-3 tbsp olive oil
Salt and pepper
A handful of fresh parsley, mint and coriander, finely chopped

For the dressing:
1/2 cup raw tahini (sesame paste)
1/2 cup water
Juice from 1/2 lemon
1 clove garlic, crashed
1/2 tsp salt, freshly ground black pepper

Preparation

  1. Wash the vegetables but do not peel (well, the onion do!). Finely dice them to small, even size cubes and place in a salad bowl. 
  2. Add the rest of the ingredients and mix well. Taste and adjust the seasoning.
  3. To prepare the tahini sauce, whisk all the ingredients in a small bowl to a creamy paste.
  4. Serve the salad with the tahini on the side to be drizzled on top.
