Oatmeal fruit garden
8 large tablespoons oatmeal,
½ liter soy milk,
3 tablespoons agave syrup,
hand full of blueberries
2 tsp cinnamon
- Bring the soy milk, in a saucepan, to a boil. Add the oatmeal and teff, let it simmer for about 5 minutes while stirring until the desired thickness.
- Peel and slice the banana and toss it well in the cinnamon powder.
- Finally, stir the agave syrup into the porridge. Transfer the porridge to 2 bowls and cover with the slices of banana, blackberries and blueberries.
Tip 1: Teff is a gluten-free nutritious ancient grain that has been cultivated for centuries in the "Horn of Africa". Teff is available at specialty health food stores.
Tip 2: You can also use fresh agave instead of agave syrup, which you can buy at some health food stores.
