2 zucchinis (courgettes)
1 block of matured white goat cheese
2 handfuls of walnuts
Some sprigs of fresh thyme
Salt and pepper from the mill

Preparation
- Preheat the oven to 180 ° C (355 °F)
- Wash the zucchini, cut it in half lengthwise and carefully hollow out both halves with a tablespoon. Place both halves in a greased baking dish.
- Make the filling by mixing the finely chopped zucchini pulp with diced feta and crumbled walnuts. Sprinkle some thyme over it. Season with salt and pepper.
- Sprinkle the zucchini halves lightly with salt and fill them with the feta mixture, drizzle with a little olive oil and put the dish in the oven for 15 minutes at 180 ° C (355 °F).
- Garnish with halved tomatoes and arugula (rucola).
Tip: Mix 2 tablespoons of raisins into the feta mixture for a slightly sweeter filling.
