Ingredients

2 zucchinis (courgettes)
1 block of matured white goat cheese
2 handfuls of walnuts
Some sprigs of fresh thyme
Salt and pepper from the mill
Fresh lettuce
Cherry tomatoes (for garnish)

Preparation

  1. Preheat the oven to 180 ° C (355 °F) 
  2. Wash the zucchini, cut it in half lengthwise and carefully hollow out both halves with a tablespoon. Place both halves in a greased baking dish.
  3. Make the filling by mixing the finely chopped zucchini pulp with diced feta and crumbled walnuts. Sprinkle some thyme over it. Season with salt and pepper. 
  4. Sprinkle the zucchini halves lightly with salt and fill them with the feta mixture, drizzle with a little olive oil and put the dish in the oven for 15 minutes at 180 ° C (355 °F).
  5. Garnish with halved tomatoes and arugula (rucola). 

Tip: Mix 2 tablespoons of raisins into the feta mixture for a slightly sweeter filling.
