Onion shiitake omelet

A vegan alternative to egg omelet

When it comes to proteins, we need an easy to digest, nourishing and energising source, Chickpeas are a good choice and in this recipe Galit is using the flour form. Onions are rich in sulphur and shiitake have immune supporting property.

Ingredients

1 tbsp olive oil
1 small red onion, sliced
4-5 large shiitake mushrooms, stem removed and sliced
4 tbsp chickpea flour
1 tsp baking powder
4 tbsp water
1/2 tsp salt
Black pepper
1/2 tsp smoked paprika
Chilli flakes, optional

Preparation

  1. Heat the oil in a non-stick pan and add the onion. Cook on medium heat for few minutes until the onions have soften.
  2. Add the shiitake slices and keep cooking until they have soften as well.
  3. While the onion and mushrooms are cooking, mix the chickpea flour, baking powder and water to a smooth batter. If too thick, add one more spoon of water, season and add the spices, mix.
  4. Pour the chickpea flour batter on top of the cooked vegetable and cover with a lid.
  5. After 4-5 minutes, remove the lid, the omelette should be set. Flip and cook for few more minutes on the other side.
