Brown rice with chickpeas

A quick and easy nutrient bomb

If you have ready cooked rice this will literally take minutes to prepare and it's perfect to go in a food flask for a warm, hearty lunch. Whole grain (brown rice) and pulses (chickpeas) combined together are a complete protein supplying all essential amino acids. This dish is rich with fibre and vitamin B complex.

Ingredients

2 tbsp olive oil
2 large red onions, peeled and finely chopped
3 cups cooked brown rice
2 jars of chickpeas, drained, or 2 cups freshly cooked chickpeas, about 400 gr.
½ tsp cinnamon (the secret ingredient in this recipe!)
Salt and pepper to taste

Preparation

  1. Heat the olive oil in a deep frying pan. Add the chopped onions and fry on a very low heat to soften and caramelise the onions, stirring occasionally.
  2. Add the cooked rice, chickpeas, seasoning and cinnamon and mix well.
  3. Keep cooking wile stirring for another 2-3 minutes and that’s that! The dish is ready to be served or packed in a food flask.

 

For the rice:

  1. Cook 1 cup brown rice with 2 cups of water and 1/2 tsp salt
  2. to shorten cooking time, soak rice for few hours or overnight, drain and cook with fresh water.
